Chicken wings, also known as Buffalo wings, hot wings, or just plain 'wings', are chicken wing segments that are deep fried and then coated in a sauce. According to the Wikipedia entry on the subject, Buffalo wings were first prepared at the Anchor Bar at 1047 Main Street in Buffalo, NY on October 3, 1964. Teressa Bellissimo, the bar's co-owner, needed a fast and easy snack to serve to her son and his friends when they came in late one night. Improvising, she came up with the idea of deep frying chicken wings, normally thrown away or saved for stock, and tossing them in "Frank's Red Hot" hot sauce.
Some U.S. restaurant chains, serve them breaded. Other 'wing spots' offer wings coated with hot spices, such as Cajun or Caribbean-style. 'Pit' wings offered in Buffalo are fried, coated in barbecue sauce, then charred on the grill. It seems as if there are as many different preparation methods as there are chickens!
